My dog’s name is Hazel. She is named after the Hazelnut tree. One night in a fit of boredom I googled Hazelnut Cookies Recipe and started browsing. This recipe stood out as having yummy potential. It is delicious!
Hazelnut Crisps
Ingredients:
1 cup hazelnuts
1 Tablespoon sugar
½ cup butter
½ cup light brown sugar (packed)
¼ teaspoon salt (skip this if using salted butter)
1 teaspoon vanilla
1 egg yolk
1 ¼ cups flour
Method:
Preheat oven to 350 degrees.
Grind the hazelnuts and the 1 Tablespoon of sugar in a food process until fine (a few chunks are ok).
Cream together the butter and brown sugar (and salt if using) until light and fluffy. Add the egg yolk and vanilla and mix until well blended. Add in the ground hazelnuts and flour and mix until well blended.
Place the dough on a sheet of waxed paper. Shape into a log about 1 ½ – 2 inches in diameter. Roll this up in the wax paper and refrigerate for at least an hour.
Once the dough is chilled, remove from wax paper and slice into ¼ to ½ inch pieces and place on a parchment paper lined baking sheet about 2 inches apart.
Bake for about 15 minutes until lightly brown on top. Cool completely.
These are nice with a drizzle of chocolate frosting.
Makes 2-3 dozen depending on the diameter of the log and the thickness of the slices.
